Determination of Patulin in Processed Foods Using QuEChERS Extraction and UHPLC-MS/MS Analysis

Patulin is a naturally occurring mycotoxin that is produced by several species of fungi, such as Aspergillus, Penicillium and Byssochlamys. Typically growing on fruit, such as apples, it has recently been implicated as a possible carcinogen and teratogen, although an official designation has not yet been made. The following detailed method utilizes a QuEChERS approach coupled with UHPLC-MS/MS for processed foods.

  • QuEChERS extraction procedure for the analysis of patulin in processed foods.
  • The inclusion of graphitized carbon black (GCB) in the dispersive-SPE (dSPE) cleanup step produces a clean sample extract.
  • Mean analyte recovery was 86.6% for samples fortified at 50 µg/kg.
